i feel like it looks too busy now, i wonder if decreasing the explanations might make it look cleaner. for example for galactitol it would just be [↑ galctitol accumulation causes cataracts].

for ecoli [↑ galactose building = ↑ risk for E. coli sepsis]

etc etc
