Is this on mobile? What does it look like originally?

Yeh mobile (but any narrow screen would probably do it)

Also happens when cards have  's instead of actual spaces

Yeh the non-breaking spaces is a known issue
The issue is that its reintroduced when editing the cards, we’d have to build in a way to have them removed automatically

Remove non-breaking spaces

A discussion recently came up where Anki’s frequent insertion of  s (non-breaking spaces) is causing a number of formatting issues with respect to card content wrapping to the viewable window, particular on smaller mobile devices.
