There is a piece of text that I have in a lot of my “anking for step” deck notes that I’d like to get rid of. Is there a clean and easy way to delete a specific string of text in a particular field (say, “this is a string of text” in the pathoma field)? I’d like to do it without deleting every instance of “this” or “is” etc, just wherever the entire string appears in a particular field in any note.

Yes, you can.
Select all the notes you want something removed in → right click → notes → find and replace → write the text you want found → write the text you want it to be replaced with (in this case nothing) → set it to only pathoma field.
This should remove all instances of that text only in the pathoma field without affecting other fields
