If I copy tags from a card and add new cards using those tags so that they would be in the same section as the original, would my new cards be deleted or could they be deleted by any future sync? My current understanding of how it works says no but I am just trying to be safe

I am not sure I understand your question, can you elaborate?
If you mean do new cards that you add get deleted? Then no, new cards you create do not get deleted
