I spent several hours doing reviews yesterday, then this morning had an anki update. The update overwrote my reviews and now Anki shows no reviews were done yesterday and that I have double the cards today. Is there a way to go back to sync to yesterday?

Anki saves many backups, you can restore a backup from yesterday. Make sure you sync afterwards then update.
