Postpone cards add on and "Easy Days" are not friends

Hola folks -
Not sure if this technically qualifies as a “bug” - but I used the postpone cards add on a couple of weeks ago (I postponed cards one day) on my AnKing Overhaul for Step 1 & 2 deck. I also have set Sundays to a “Reduced” card load.
My “Easy day” is now on Monday, instead of Sunday. Not sure which function isn’t playing nice; I think maybe the Easy Days component “kept going” when Postpone cards caused everything to stay back a day?

Anyway, any guidance as to how to restore everything and get my easy days back on actual Sunday and not Monday (and to prevent this from happening in the future) would be much appreciated.

P.S. FWIW, in case this matters: I DO have the FSRS helper add on; I see that it’s got options like “Postpone cards in all decks” and “Advance cards in all decks” and the “Less Anki on Easy Days” has dropdowns for “Apply easy days for specific dates” and “apply easy days now” but I don’t know if those functions are pertinent to this.

I’m sorry to say that the short answer will be: once you start mixing-and-matching add-ons, most of which are written by third-party groups, there’s almost no telling what kind of conflicts you might run into.

Especially with multiple overlapping add-ons, that will very quickly get to a point where troubleshooting is probably beyond what we can help with, on the AnkiHub side.

For better or worse, if you’re having trouble with a specific add-on (aside from, obviously, the AnkiHub add-on), the tried and true method to troubleshoot will likely be to reach out to the add-on author and/or on the official Anki forums, I’m sorry to say.

This is especially true of the FSRS-related add-ons, as they are duly complex and the mechanics behind how they’re written are pretty specialized knowledge; in many/most cases you’ll want to reach out to one of the FSRS authors for specific guidance on the ins and outs of their specific add-on.
