Tags are appearing at the bottom of my Anking Overhaul deck.
I have no clue why is this happening all of the sudden and I even tried to update the Anking note types bit it didn’t allow me to.
UPDATE:
I went to [ANKI | AnKing | AnKing Note Types" and clicked “RESET” on both the “general” and “Anking” tabs.
Then I restarted ANKI.
Now the tags are gone. However, I don’t know if I have the correct AnKing note types set up after resetting. Do I have to worry about that?
Your AnKing note types should be okay.

So that I understand correctly, does resetting the note type remove the Anking note types?

No it does not remove it, it just resets it back to its default settings!
