Is there a way that I can use Anki without any LLMs in the future? I have some serious ethical and practical concerns about integrating LLMs into Anki and, frankly, think it is more than good enough as-is. Please make this possible.

Yes, that is currently the case. All LLM based features are opt-in. None of them are automated or forced upon you. You have to explicitly request and use them if you want them.
