my own notes have all been deleted although I put them in the “own notes” field. What can I do to get them back or that it does not happen again?

A couple of things:
In order to restore your collection you can restore from a backup: How to Restore From Backup
Keep in mind that restoring from a backup, while it will restore your collection, will also erase any review progress you’ve made since the time to which you restore your collection.
In order to prevent it from being overwritten, you can protect that field: Managing Protected Fields
