It sounds like this is an Anki sync/backup issue between AnkiWeb, your Mac, and your iPhone, and not something specific to AnkiHub.

While you’re waiting on them, here are the key things you can try in Anki Desktop (on your Mac) to recover the lost cards:
Check Anki’s automatic backups
Open Anki on your Mac
Go to File → Switch Profile → [your profile] → Open Backups (or File → Open Backup depending on version)
Look for a backup from before the sync that deleted your cards
Restore that backup and see if your 3 days of cards are there
Decide which device has the correct data
If your Mac has the correct cards after restoring a backup, then in Anki on Mac:
Go to Tools → Preferences → Network
Check “On next sync, force changes in one direction” and choose Upload to AnkiWeb
Sync, then on your iPhone choose Download from AnkiWeb when prompted
If your iPhone still has the correct cards, do the same process but treat the iPhone as the “good” copy and overwrite the Mac.
Important going forward
Whenever Anki asks you to upload or download, stop and think which device has the version you want to keep. Choosing the wrong one will overwrite the other side.

This is related to Anki specifically. AnkiWeb is Anki’s cloud backup service. Please be careful, as choosing “Download” will overwrite the data on your device with the version from the cloud. Conversely, choosing “Upload” will overwrite the cloud data with what is currently on your device.
Therefore, it is important to know whether your local collection or the cloud version is the most up-to-date.
