Your Lecture Notes field will not be deleted if you sync with AnkiHub. 
The Lecture Notes field isn’t really ever edited by AnkiHub. If you want to make triple sure, you can double-check that the field is protected: Managing Protected Fields
But, the Lecture Notes field is there specifically for your personal use and it’s not a field that’s ever edited or changed on the AnkiHub side so you should be good to go.
