I had 10k+ cards unsuspended on anki that ive been working on the last year. I accidently suspended them all… What can i do

If you accidentally suspended them you can just unsuspend them again. The process is identical to suspend, or unsuspend, cards.
Depending on how you go about it, there are different screens from which it can be done but the easiest would be from the Browse screen:

I only want to unsuspend the cards that I have been working on- most of them mature. Is there a way i can only unsuspend those cards?
You can unsuspend one card at a time, or many cards at a time (or, in theory, all of the cards at one time). The short version is that you’ll want to first find the cards you want to unsuspend.
Once you’ve found them you’ll want to select them, then right-click, then click ‘toggle suspend.’

You can filter by cards due, then unsuspend those. Most likely the cards you were doing will have a due date, and the ones that you haven’t done will be marked as new
So you can filter by due date and unsuspend all those that do have one
