Are notes I enter into the “Extra” field private or do they get uploaded to Ankihub every time I sync?
Or is there a field I should use for my own personal notes so they don’t get uploaded nor overwritten?

Hey there!
The notes you enter in extra field get synced from ankihub and you will not be able to retain any edits you make to it.
The 4 fields, namely lecture notes, missed questions, pathoma, and boards and beyond will never be updated, you can always add you own notes/info to them and protect these fields.
Make sure you have protected these 4 fields on Ankihub.
