New tags are not syncing to how bootcamp has restructured their videos. Bootcamp GI block seems to be organized by organ system and the organization in Anking Step Deck does not align. Is there a way I can get the new tags for the Anking Deck as my classmates have different tags than me.

Please try resetting your local changes. To do this:
Go to browse in your Anki → at the top click on the ankihub addon tab → press reset all local changes
This will restore everything to what AnkiHub has unless you have specifically protected those fields
